For Neville Gardner, McCarthy’s Red Stag Pub has always been more than a business… it’s been a lifelong dream.

Before it became the beloved Irish pub locals know today, the space was once a simple tea room. In 1985, Neville opened a small retail shop in Donegal Square, a place that reminded him of home and planted the seed for something bigger. Inspired by his roots and a deep love for Irish pub culture, Neville set out to create an authentic gathering place, one that felt real, welcoming, and rooted in tradition.

That dream came to life in 1997 with the opening of McCarthy’s. What started with a small bar in the front continued to grow over the years, officially expanding in 2008 when the pub received its liquor license. From there, McCarthy’s evolved into a cornerstone of the community… without ever losing the heart of what made it special in the first place.

Today, authenticity is at the core of everything McCarthy’s does. The food is made with love, the atmosphere feels like home, and visitors from Ireland often comment on how “real” the experience is. Whether guests are stopping in for breakfast or brunch, meeting friends for a pint, or celebrating a big match, McCarthy’s delivers a true Irish pub experience year-round.

And when it comes to Guinness, they do it right. McCarthy’s is a top Guinness account, known for serving the perfect pint, poured carefully over 119.5 seconds to ensure the ideal balance and flavor.
